Bonbon vs. Truffle
Truffle and Bonbon? What’s the difference? Aren’t they the same thing? Something with chocolate?
Check out this YouTube video:
Both are made out of chocolate and are under the umbrella of confections.
Confections are defined as sweet food like marshmallows, chocolate, marzipan, meringue and are usually eaten without utensils.
Truffle
Truffles have a Ganache center (traditionally made out of chocolate, cream and butter). The center is either piped or scooped and rolled into cacao powder. But I love to use toasted nuts, sugar or even strawberry and Matcha powder.
Because their shape is super uneven and rough, they are called after the French mushroom-like fungus Black Truffle.
Bonbon
If the center is not made out of Ganache and has a hard shell, we call it Bonbon.
“Bon” means good in French, so bonbon refers to a very delicious confection. Bonbons can be filled with fruit puree, cream, caramel and honestly - everything yummy!
But the biggest difference between a Truffle and Bonbon is the shell and shape. Bonbons are made with molds, which means they are very regular and every piece looks the same.
