Energy Bites - Make your own snack for your hike!

Because I love the outdoors, I want to make my own little Energy Bites to take with me on a hike.

My husband recommended a recipe of Follow Bigfoot, a Hiking YouTube Channel. Said and done. 

I made a vegan version out of it, but of course you can replace the syrup with honey and the pea protein powder with whey protein. 

Here’s  what you’ll need:

  • 1 cup nut butter (almond, peanut.. what every you like best)

  • 1/2 cup syrup (rice and stevia syrup will work or honey)

  • 2 tablespoons coconut oil

  • 1/2 cup almond milk

  • 1/2 cup cacao nibs

  • 1/2 cup nuts (peanuts, almonds, pecan)

  • 1/2 cup berries or dried fruit (plum, apricot or blueberries)

  • 1 1/2 cup chopped dark chocolate

  • 1/2 cup oats

  • 1/2 flax seed meal

  • 1 cup protein powder (pea or whey)

  • 1 teaspoon salt

How you make my Energy Bites

  1. Mix nut butter and syrup in a bowl

  2. Add all other ingredients besides 1/2 cup dark chocolate and salt

  3. Mix well by hand

  4. If it’s too dry: add more coconut oil and almond milk

  5. If it’s too wet: add more protein powder

  6. Scoop balls

  7. Melt the remaining 1/2 cup dark chocolate and sprinkle over bites and add salt on top
