Energy Bites - Make your own snack for your hike!
Because I love the outdoors, I want to make my own little Energy Bites to take with me on a hike.
My husband recommended a recipe of Follow Bigfoot, a Hiking YouTube Channel. Said and done.
I made a vegan version out of it, but of course you can replace the syrup with honey and the pea protein powder with whey protein.
Here’s what you’ll need:
1 cup nut butter (almond, peanut.. what every you like best)
1/2 cup syrup (rice and stevia syrup will work or honey)
2 tablespoons coconut oil
1/2 cup almond milk
1/2 cup cacao nibs
1/2 cup nuts (peanuts, almonds, pecan)
1/2 cup berries or dried fruit (plum, apricot or blueberries)
1 1/2 cup chopped dark chocolate
1/2 cup oats
1/2 flax seed meal
1 cup protein powder (pea or whey)
1 teaspoon salt
How you make my Energy Bites
Mix nut butter and syrup in a bowl
Add all other ingredients besides 1/2 cup dark chocolate and salt
Mix well by hand
If it’s too dry: add more coconut oil and almond milk
If it’s too wet: add more protein powder
Scoop balls
Melt the remaining 1/2 cup dark chocolate and sprinkle over bites and add salt on top
