Chocolate Zucchini Bread with Nibs

My freezer is empty, which means I need more snacks for bad times.

Today it’s time for a chocolate zucchini bread with cacao nibs - vegan and gluten free.

Here’s what you need: 

  • 2 tablespoons of flax seed meal

  • 5 tablespoons water

  • 1/4 cup or 64g applesauce

  • 2 tablespoons of sugar or sugar alternative

  • 1/2 tablespoon baking soda

  • pinch of salt

  • 1/2 cup or 100g melted coconut oil

  • 1/4 cup or 64g unsweetened coconut milk

  • 1 small grated zucchini

  • 3/4 cup or 150g almond flour

  • 1/4 cup or 64g oat bran

  • 2/3 cups or 100g dark chocolate

  • 2 tablespoons cacao nibs


What you need to do: 

  1. Add flax seed meal to the water, mix and let set for 2-3 minutes

  2. Add applesauce, sugar, baking soda, salt and mix well

  3. Pour the melted coconut oil over and mix

  4. Add the zucchini and coconut milk to the mix and incorporate

  5. Add almond flour, oat bran, chocolate and nibs and mix well
