Horchata Ganache

Horchata is a sweetened milk beverage which is nice and refreshing. Does it work if I make a chocolate ganache out of it? Let’s find out :)

Horchata

(In the video I cut the recipe in half)

Ingredients

100 g or 1/2 cup uncooked rice

700 ml or 3 cups water

1 tablespoon ground cinnamon

240 ml or 1 cup plant based milk (dairy works too)

50 g or 1/4 cup of sugar

Instruction 

  1. Blend rice, water, cinnamon until rice is broken up and water is milky. 

  2. Next morning: strain and remove rice

  3. Add plant based milk and sugar

  4. If you want to drink it, add ice and you’re done



Ganache

Ingredients

75 ml or 1/3 cup horchata 

1 teaspoon glucose syrup 

75 g or 1/3 cup chocolate

  1. Heat horchata in small pot with glucose sure until it boils slowly

  2. Pour hot mix over chopped chocolate in 2-3 steps

  3. Blend with immersion blender
