Keto cookies with Cacao Nibs

I love cookies! And here’s one of my current favorite recipes with cacao nibs and chocolate. 

The recipe is super fun, because you can exchange so many ingredients super easily. If it’s coconut oil instead of butter or nuts instead of chocolate, be creative and try it out yourself!

What you need:

  • 1 cup almond flour

  • 2 tablespoons of coconut oil/butter

  • 2 tablespoons of sugar/sweetener

  • 2 tablespoons cacao nibs

  • 3 tablespoons chocolate (choose sugar free chocolate chips for the keto version)

  • 1/2 teaspoon baking soda

  • 3 teaspoons milk/milk alternative

  • pinch of salt

How you make them:

  1. Combine almond flour, coconut oil and sugar in a bowl and whisk together

  2. Add cacao nibs, sugar, salt, milk and baking soda

  3. Mix well

  4. Scoop balls and flatten them out to create cookies

  5. Bake for 10-15 min at 340°F/170°C

  6. Allow to cool down for at least 20 minutes
