More how to make Bonbons at home!
I’m not an expert in bonbon making - but I enjoy making them. So here we go with a little how to make my bonbons.
Check out my YouTube video:
1.Designing molds
That’s a really fun step. I’m using colored cacao butter to design my molds. You can use brushes, toothpicks, your fingers, sponges and what ever you can think of to make your unique design.
Warm up your cacao butter, but make sure not to heat it up over 114°F / 45°C, otherwise your cacao butter goes out of temper.
2. Create shell
Use tempered chocolate, fill your molds, flip it over and release chocolate. Cool down in refrigerator for 20-30 minutes.
3. Filling
You can be super creative at this step. You can fill your bonbons with whatever you can think of - Ganache, peanut butter, jam, pate de fruit, cookies, marzipan… the list goes on an on!
4. Create bottom
Use tempered chocolate and fill each cavity. Don’t forget to scrap the access chocolate with a spatula. Let cool down in the refrigerator for 20-30 minutes.
5. Release
Finally you can flip your molds over and release your self-made bonbons!
