Here’s a brief overview of the history of Belgian chocolate. One huge milestone was in 1912. Neuhaus invented the bonbon.

The secret of Belgian chocolate success lies in the ingredients and production.
In 1884 a law was released stated, that at least 35% cacao must been used in chocolate. Some companies substitute cacao butter (expensive) with vegetable oil (cheap) which leads to an extreme decrease in chocolate quality. That’s not happening in high quality chocolate.
Belgian chocolate makers control their whole process. It’s not starting in their factory, but at the cacao origins, where the cacao tree is growing.
