Kiwi + Banana

Let’s make a Kiwi jam and a banana ganache. What could go wrong :)

Kiwi Jam

Ingredients 

  • 10 small or 475 g Kiwis

  • 0.75 cup or 150 g sugar 

  • 1 teaspoon lemon juice 

  • Pinch of salt


Instructions

  • Add Kiwis, sugar, lemon juice and salt into pot

  • Cook mix for 15-20 min or until the mix thickens



Banana Ganache 

Ingredients


  • 50 g or 1/4 cup glucose

  • 140 g or 2/3 cup sugar

  • 75 ml or 1/3 cup cream/cream alternative 

  • 1 large or 2 small or 115 g smashed bananas

  • 170 g or 1 cup chocolate (I used 70% dark chocolate) 

  • 13 g or 1 tablespoon butter/butter alternative 


Instructions

  1. Cook glucose with sugar to a light color

  2. Add cream and bananas

  3. Cook for 1 min

  4. Pour hot mix over chocolate and butter in 2-3 steps
