Banana Foster

Have I ever tried Banana Foster before? No, but it sounds delicious and it won’t stop me making a banana foster filling for chocolate bon bons :) 

Banana Caramel

Ingredients

  • 50 g or 1/3 cup blended dried banana chips

  • 2 tablespoons butter (I used vegan butter)

  • 100 ml or 1/2 cup cream 

  • 50g or 1/4 cup sugar

  • 1/4 teaspoon salt

  • 1/4 teaspoon cinnamon 

Instructions 

  1. Melt butter

  2. Add sugar, cinnamon and salt 

  3. Cook until sauce thickens

  4. Add blended banana chips and cream

Whiskey Ganache

Ingredients

  • 50ml or 1/4 cup rum  (I used whiskey, because I haven’t had rum at home)

  • 100g or 3/4 cup dark chocolate (I used a 78% dark chocolate) 

  • 20g or 1/8 cup sugar

  • 1 tablespoon glucose

Instructions

  1. Melt chocolate

  2. Heat sugar and glucose to 45C/113F

  3. Mix liquor with heated sugar and glucose

  4. Pour liquor with the sugars into the chocolate step by step

  5. Blend with an immersion blender homogeneous
