Banana Foster
Have I ever tried Banana Foster before? No, but it sounds delicious and it won’t stop me making a banana foster filling for chocolate bon bons :)
Banana Caramel
Ingredients
50 g or 1/3 cup blended dried banana chips
2 tablespoons butter (I used vegan butter)
100 ml or 1/2 cup cream
50g or 1/4 cup sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
Instructions
Melt butter
Add sugar, cinnamon and salt
Cook until sauce thickens
Add blended banana chips and cream
Whiskey Ganache
Ingredients
50ml or 1/4 cup rum (I used whiskey, because I haven’t had rum at home)
100g or 3/4 cup dark chocolate (I used a 78% dark chocolate)
20g or 1/8 cup sugar
1 tablespoon glucose
Instructions
Melt chocolate
Heat sugar and glucose to 45C/113F
Mix liquor with heated sugar and glucose
Pour liquor with the sugars into the chocolate step by step
Blend with an immersion blender homogeneous
