Black Sesame Praline with Orange Marmalade

Here’s a new recipe for chocolate bon bons: Black sesame praline with orange marmalade. An awesome treat!

Black sesame praline

Ingredients

160 g or 1 cup  sugar

300g 2 1/4 cup black sesame seeds

2 tablespoons almond oil

1/2 tablespoon glucose syrup 

Instruction

  1. Caramelize sugar with glucose syrup

  2. Once sugar is browned, add sesame seeds

  3. Cool down

  4. Blend in a food processor/blender with the oil until it has the consistency of almond or peanut butter

Orange jam

Ingredients 

3 navel oranges

1 lemon

1 or 200 g cup sugar

Juice of 1 lemon

Pinch of cinnamon 

Instruction

  1. Peel oranges, keep peel

  2. Cut thick white skin off fruit

  3. Cook peel in 3 cups or 700 ml water for 10 min

  4. Drain water

  5. Repeat total of 3 times (removes bitterness from peel)

  6. Add oranges, sugar, lemon juice and 2 cups or 500 ml water to peel and cook

  7. Let simmer for 50 min

  8. Blend if you want no fruit pulp and add cinnamon
