Let’s talk Chocolate and Cannabis
I’m not a regular consumer of cannabis, but when I found out that my former co-worker Heather started out as a cannabis activist I was intrigued. Next day I bought a little cannabis infused truffle - turns out it tasted awful. The chocolate was bitter, super unpleasant, the texture was chalky and not smooth at all. What bothered me most was that typical grassy cannabis flavor was sooo overpowering. If you want to relax or treat pain with cannabis, does it really need to taste horrible? Is there no other option?
To answer this question, Heather and I met in my kitchen and got things rolling.
Heather brought her homemade cannabis infused butter and coconut oil and we created truffles with my single origin 78% dark chocolate and made granola with my cacao nibs.
The Truffles
We used my Colombian 78% dark chocolate for the shells, as well as for the ganache. Usually I would add a teaspoon of butter to my ganache (or coconut oil for my vegan option) to make it more creamy and rich. This time we used Heathers infused cannabutter. The truffles taste how they should taste - creamy, rich, smooth and chocolaty. We took it slow and came a long with 2mg TBC in each piece. Usual store bought products contain about 10mg TBC each piece. Which means you can eat more chocolate (YEEES!).
The grain free Granola
Heather and I baked sunflower seeds, pumpkins seeds, chia seeds, coconut flakes, stevia, an egg white, walnuts and of course my cacao nibs with the infused coconut oil. There was only a slight and very pleasant taste of cannabis. We ended up with 9mg TBC per serving. By the way the little bowl in the picture below ended up as my dinner - not my breakfast :)
To sum up, I would say our two experiments turned out great and I had a lot of fun with Heather.
I probably won’t buy infused truffles again, I rather make them on my own because it just tastes so much better.
