What to do with Cacao Nibs? Part 6 Vegan Cookie
If I could, I would eat cookies all day long, but the little responsible voice in my head (I picture the voice as a little chicken 🐥) says clearly no to that plan.
But once in a while I go for it and make cookies. Of course with chocolate! I'm using nibs to make my cookies more crunchy and to achieve a richer, deeper chocolate flavor.
This is a vegan recipe for very fudgy, chocolaty cookies. Best on a Sunday morning with a cup of milk, lying cozy on the couch.
What you need to make my cookies:
1 cup or 120g almond meal
1/2 cup or 100g melted dark chocolate
1/4 cup or 45g walnuts (or any nuts of your choice)
1 teaspoon baking powder
1 teaspoon salt
1/3 cup or 60g coconut sugar
4 large dates
water to soak dates
1/3 cup or 60g aquafaba (liquid part in a chickpea can)
3 tablespoons melted coconut oil
1/8 cup or 25g nibs
How to make cookies:
Soak dates in water for 20 minutes
Melt dark chocolate
Drain dates and mix them with a blender
Add chocolate to almond meal, walnuts, nibs, baking powder, mixed dates, salt and coconut sugar
Mix well
In a separate bowl, beat aquafaba till a fluffy foam develops
Melt coconut oil and add to fluffy aquafaba
Combine both carefully
Pour aquafaba-coconut oil mix to chocolate dough
Mix very well
Scoop dough onto parchment paper lined baking dish
Sprinkle nibs on top
Bake for 20 minutes at 350F/180C
